Breakfast Scramble

Breakfast Scramble


One day at work I decided that sausage, eggs, green pepper and onion would make one hell of a breakfast bake. Yeah, yeah, not the most original thing, I know. But still, it was great!

Prep Time: 5 minutes
Cook Time: 30 minutes
Serves: 4

Ingredients:

1 pkg frozen sausage mix, defrosted (it comes in a tube)
1 green pepper, diced
1 small sweet onion, diced
4 eggs, beated
1/2 cup cheddar cheese, grated
salt and pepper to taste

Directions:

Preheat your oven to 400 degrees F.

In a frying pan over med-high heat (or in a dutch oven if you have it, less to clean!), cook your sausage. Add the onions and green pepepr when the meat is starting to brown, and continue cooking until the meat is well browned and the onions are translucent. Remove the meat mixture to a plate and wipe out the excess fat with a paper towel.

Add the eggs along with a little bit of salt and pepper, and scramble.

When the eggs are cooked, pour them, along with the sausage mixture, into an oven safe caserole dish. Top with the grated cheese and bake until the cheese is melted, about 10 minutes.
